If you’re looking for meal prep ideas that are high in protein and actually exciting to eat, here are 3 easy vegan meal prep recipes I’m making this week. Some weeks I only prep breakfast and lunch, and other times I like to prep myself for all 3 meals. It really just depends on what I have going on. This meal prep covers breakfast, lunch and dinner, ensuring that I have an easy week of nourishing meals.

Breakfast Meal Prep – S’mores Overnight Oats

I have been loving the fun flavours that Good Protein has been creating for their protein powders. I was previously hooked on the Maple Cookie flavour, but sadly, it’s seasonal. When I saw they were coming out with their S’mores flavour, I thought it would be a good replacement and was so excited to try it.

These overnight oats taste like dessert but are packed with protein thanks to Good Protein S’mores Protein Powder, and a creamy chocolate pudding on top. Each jar is nearly 32g of protein! Simply make the overnight oats mixture, blend the high-protein chocolate pudding and assemble. If you want to make these breakfast jars extra decadent, add dairy free chocolate chips, vegan marshmallows, and graham crackers.

S’mores Overnight Oats

Ingredients
  

S'mores Overnight Oats

  • 2-3 cups soy milk
  • 4 scoops Good Protein S’mores
  • 2 cups rolled oats
  • 4 tbsp chia seeds

Chocolate Protein Pudding

  • 1 package silken tofu
  • 3 tbsp cocoa
  • 2 –4 tbsp maple syrup
  • ¼ cup coconut cream
  • 1 tsp vanilla extract

Instructions
 

S'mores Overnight Oats

  • Add non-dairy milk and protein powder to a blender and mix to combine.
  • In a large container, add oats and chia seeds. Pour the S'mores mixture over the oats and let sit overnight. (You can skip this step and pour ingredients directly into jars by dividing the ingredients between the 4 of them)

Chocolate Protein Pudding

  • Add all of the ingredients to a blender and mix to combine.

Assemble Jars

  • Optional: add melted chocolate to the bottom of the meal prep containers.
  • Divide the S'mores overnight oats mixture between 4 jars.
  • Layer the chocolate protein pudding on top.
  • Optional: Top with graham crackers, vegan marshmallows, chocolate chips, and melted chocolate.

Vegan Lunch Meal Prep – Crispy Rice Chickpea Bowls

If you’re looking for more ways to add protein to your lunches, I highly recommend adding silken tofu to sauces. It acts as the base for this meal prep, and the outcome is so very delicious. These bowls are simple, tasty, and will leave you feeling fuelled all day.

These bowls combine crispy, savoury rice with chickpeas, crunchy vegetables, and peppery arugula served over a creamy silken tofu chilli oil sauce. And if spice is a concern, I have a great MILD chilli oil recommendation.

Crispy Rice Chickpea Bowl

  • 1 ½ cups jasmine rice

Chili Tofu Sauce

  • 1 package silken tofu
  • 1 tbsp soy sauce
  • 1 tbsp miso paste
  • 1 tbsp sesame oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1-2 tsp lemon juice
  • 2 tbsp chili oil

Roasted Chickpeas

  • 2 19 oz can of chickpeas, rinsed and drained
  • 1 tbsp avocado oil
  • 2 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder

Toppings

  • 2 cups cucumber , diced
  • 2 cups edamame , steamed
  • 2 cups arugula microgreens

Vegan Dinner Meal Prep – Sesame-Tahini Noodles

Creamy noodles are always my meal of choice, and with this Sesame Tahini Noodle recipe, you’ll see why. I wanted an easy, comforting meal that I could heat and enjoy after work – when I have ZERO energy. The noodles are coated in a rich, savoury sesame-tahini sauce with just the right amount of sweetness and acidity. I paired them with tender bok choy and crispy, seasoned tempeh crumble for extra texture and protein.

The sauce comes together in just a few minutes, making this an easy weeknight dinner or meal-prep option when you want something comforting without spending hours in the kitchen. I love finishing these bowls with a sprinkle of sesame seeds, chili oil and green onion for a little extra crunch and freshness.

Sesame-Tahini Noodle Bowls

Ingredients
  

Creamy Sesame-Tahini Noodles

  • ¼ cup tahini
  • 2 tbsp soy sauce
  • 3 tbsp coconut cream
  • 1 tbsp toasted sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp maple syrup
  • 1 garlic clove, minced
  • 1 tbsp fresh ginger, grated
  • splash water
  • 189 g T&T Wide Ramen Noodles , (3-4 dried blocks)

Smoky Tempeh Bacon & Bok Choy

  • 1 block of tempeh
  • 3 tbsp soy sauce
  • 2 tbsp maple syrup
  • 1/2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/4 tsp pepper
  • 10-12 bok choy, halved
  • 1 tbsp olive oil

Instructions
 

  • Prepare the tempeh crumble. Crumble the tempeh into small pieces. Heat a drizzle of oil in a skillet over medium heat., then add the tempeh. Season with soy sauce, garlic powder, onion powder, smoked paprika and black pepper. Cook for 5–7 minutes, stirring occasionally, until golden and slightly crispy. Set aside.
  • Make the sesame-tahini sauce. In a medium-large bowl, whisk together the tahini, soy sauce, toasted sesame oil, coconut cream rice vinegar, maple syrup, garlic and ginger. Add 1–2 tablespoons of water at a time, whisking until the sauce is smooth and creamy and reaches your desired consistency.
  • Cook the noodles. Prepare your noodles according to the package directions. Drain well and set aside.
  • Cook the bok choy. Add the bok choy to the same skillet used for the tempeh. Cook for 2–3 minutes, until the leaves are wilted and the stems are tender-crisp. Add a splash of water if needed to help steam the bok choy.
  • Bring everything together. Add the cooked noodles to the the sesame-tahini sauce. Toss until the noodles are evenly coated. If the sauce is too thick, add another splash of water until creamy.
  • Add the bok choy and tempeh to containers, store, and enjoy. Refrigerate for up to 4 days. When reheating, add a splash of water and toss to loosen the sauce.
