These banana bread overnight oats taste like your favourite homemade banana bread, but they’re the perfect breakfast prep and ready to grab straight from the fridge. Creamy, lightly sweet, and packed with cozy cinnamon and banana flavour, they’re an easy vegan breakfast for busy fall mornings.

Made with rolled oats, chia seeds, vegan yogurt, bananas, banana milk, and vanilla protein powder, these overnight oats are a simple way to prep breakfast for the week. I topped mine with a toasty oat crumble that provides a yummy crunch and added 3 caramelized banana slices.

I made this recipe using the unsweetened banana drink from my Odd Bunch pantry box, which is a super easy way to bring the banana flavour to these banana bread overnight oats.

How to Make Banana Bread Overnight Oats

Ingredients

Banana Milk

Overnight oats

  • 2 cups rolled oats
  • 1/4 cup chia seeds 
  • 1 cup vegan yogurt
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp salt
  • optional: ¼ cup maple syrup

Banana Bread Crumble

  • ¼ cup rolled oats
  • ¼ cup chopped walnuts 
  • 2 tsp maple syrup
  • 1 tsp cinnamon
  • 1 tbsp coconut oil

For topping

  • Cinnamon
  • Caramelized Banana slices
  • Extra walnuts or pecans, optional

How to Make Banana Bread Overnight Oats

1. Make the crumble

Heat a medium skillet. Add in vegan butter, rolled oats, chopped walnuts, maple syrup, and cinnamon, cooking until golden and crispy.

2. Make banana milk

Add a banana, banana milk, and protein powder to a blender. Blend until combined. I used my Beast blender; it’s perfect for small batches.

3. Make overnight oats

Make overnight oats jars. In each jar, add oats, chia seeds, cinnamon, nutmeg, vegan yogurt, and banana milk. Mix thoroughly, seal and refrigerate for at least 4 hours, or overnight.

4. Add toppings

Add the toppings. Once the overnight oats have thickened, top with banana bread crumble. Slice the remaining banana and sauté until caramelized. Add a few slices to each jar.

Tips for the Best Banana Bread Overnight Oats

Make the crumble on the stovetop. It’s quick, easy, and gives the oats and nuts a delicious toasted flavour. Keep the heat at medium-low and stir frequently so the maple syrup doesn’t burn.

Let the crumble cool completely. It will crisp up as it cools.

Option to keep the crumble separate. If you’re meal prepping these several days in advance, store the crumble in a separate airtight container and add it just before eating to keep it crunchy. That said, I put mine right in the jar, and it was crunchy enough for me!

  • ¼ cup rolled oats

  • 2 tsp maple syrup

  • 2 tsp vegan butter or melted coconut oil

Banana Bread Overnight oats

  • 3 cups unsweetened banana milk
  • 1 ripe banana
  • 1 scoop vanilla vegan protein powder
  • 2 cups rolled oats
  • ¼ cup chia seeds
  • 1 cup plain vegan yogurt, or vanilla
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon salt
  • optional: ¼ cup maple syrup

Optional: Caramelized banana slices

  • 1 ripe banana, sliced
  • 1 – 2 tsp coconut oil

Instructions
 

  • Make the crumble. Heat a medium skillet. Add in vegan butter, rolled oats, chopped walnuts, maple syrup, and cinnamon, cooking until golden and crispy.
  • Make banana milk. Add 1 banana, banana milk, and protein powder to the blender and blend until combined.
  • Make overnight oats jars. In each jar, add 1/2 cup oats, 1 tbsp chia seeds, 1/4 tsp cinnamon, a pinch of nutmeg, 1/4 cup vegan yogurt, and 3/4 cup banana milk. Seal and refrigerate for at least 4 hours, or overnight.
  • Add the toppings. Once overnight oats have thickened, top with banana bread crumble. Slice remaining banana and sauté until caramelized. Add a few slices to each jar.
