Buffalo chicken is one of those flavours that is not only familiar but also tends to be a fan favourite. It is known for being bold and zesty with just enough heat to enjoy but not enough to make you break a sweat. And, with plant-based ingredients, it is easy to make these Buffalo Chick’n bites vegan!

These bites are incredibly easy to make and are the perfect party appetizer to share among friends. Or, you could keep them at home and add a few to your meals with a tasty side dish. Either way, you’re going to love these and wish you had more!

Breaking It Down – Buffalo Chick’n Bites Ingredients

Here are the main players you’ll need for these tasty bites.

  • Tortillas (you could use small or large ones – I purchased small)
  • Buffalo Sauce (I used a vegan storebought jar)
  • Cream Cheese
  • Sour Cream
  • Ranch Dressing (I used a vegan storebought jar)
  • Soy Curls
  • Cheese Shreds

Making the Tortilla Cups

What makes these vegan Buffalo Chick’n Bites so good? It’s the tortilla cup. The tortilla cup is what holds the creamy and dreamy Buffalo Chick’n mixture in place.

Grab your package of tortillas and cut out little circle shapes that will be your cups for the Buffalo Chick’n mixture. If you have a cookie cutter that is the right size, use that. My circle cutter was a little too small so I just used the lid of a cup and traced along the edges with a knife. You could use a mug too!

Tip: Don’t toss your tortilla scraps. Add them to a pan with hot oil, fry, and coat them with cinnamon sugar for some churro chips!

Once you have your circles, gently fold them into a muffin tin. You may have to squish your sides in but that’s ok! Now they are ready for that delicious Buffalo Chick’n mixture.

Making the Buffalo Chick’n Bites Mixture

The Vegan Buffalo Chick’n – Soy Curls

This recipe uses soy curls as its chicken substitute and my gosh, it’s perfect! I love using soy curls because they truly take on that chicken texture. They also absorb all of the Buffalo Chick’n sauce making each bite exceptionally delicious. Using a bag of Butler Soy Curls, hydrate the soy curls in some water. Once the curls have expanded, you can drain them and begin to fry!

Creamy Dream Team – Cream Cheese & Sour Cream

Using a blend of cream cheese and sour cream allows this Buffalo Chick’n mixture to get that creamy and dreamy texture that keeps you coming back, bite after bite. It also helps keep reserve a little bit of the kick from the buffalo sauce so that it’s a little more on the mild side. If you’re worried about losing some of the heat – I got you. You could always add your desired amount of hot sauce so you don’t have to lose out on the delicious creaminess of this mixture.

I used Earth’s Own Cream Cheese and Sour Cream for this recipe and love how delicious and creamy they turned out. The cream cheese is very subtle in taste which allows it to take on the buffalo chick’n sauces

Saucy Duo – Buffalo & Ranch

Buffalo and ranch are an iconic duo. If you were to order buffalo wings at a restaurant, you’re almost guaranteed to get a side of ranch. So of course this recipe had to combine both of those delicious flavours in the Buffalo Chick’n mixture. The ranch helps cool down a little bit of the heat and tang from the buffalo sauce while adding a herby depth that compliments the sharpness of a buffalo sauce. These two sauces are the epitome of a harmonious blend.

While you could make your sauces from scratch, I wanted to make this recipe a breeze to whip up. I used store-bought vegan buffalo and ranch sauces so all I had to do was pour, making these bites quick and easy to throw together.

Are all buffalo and ranch sauces vegan? No. If you’re looking for plant-based versions of these sauces, just double-check the ingredients on the back. They sometimes contain milk or other animal by-products.

Cheesy Goodness

Adding some cheese shreds to this Buffalo Chick’n mixture was the perfect way to add a little extra deliciousness while contributing to the overall creamy texture of these bites. I mixed mine in but you could always sprinkle on top before placing the pan into the oven.

Vegan Buffalo Chick’n Bites – Putting It All Together

Once the soy curls are cooked, you’re ready to put all the ingredients in a big bowl, mixing until combined. Next, you’ll want to add the mixture to the tortilla cups and bake for 25-30 minutes until golden brown.

Take the Buffalo Chick’n Bites out of the oven and allow them to cool before removing them from the baking tins. Next, add toppings of your choice to the bites. I topped mine with a dollop of sour cream, green onions and micro greens for a little freshness and an extra crispy crunch.

Other Uses for Buffalo Chick’n Mixture

If you opt out of making these delicious bites in tortilla cup form, there are still many other ways to enjoy the delightful taste of buffalo chick’n. Add this mixture to a wrap or make a bowl with some rice and add some diced cucumber, cherry tomatoes, or whatever you prefer!

Vegan Buffalo Chick’n Bites

A quick and easy snack or appetizer that is guaranteed to be a crowd-pleaser! These Buffalo Chick'n Bites are full of flavour and perfectly creamy in their tortilla cups.

Ingredients
  

Soy Curls

  • 1 bag Butler Soy Curls hydrated, drained and chopped
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • salt & pepper to taste

Tortilla Cups

  • 12-16 Tortillas small

Buffalo Chick'n Mixture

  • 8 oz cream cheese
  • ¾ cup buffalo sauce
  • ½ tbsp onion powder
  • ½ tbsp garlic powder
  • ¼ tsp salt
  • ½ cup sour cream plus more for topping
  • cup ranch dressing
  • ½ cup cheddar cheese shreds

Instructions
 

  • Preheat oven to 350F. Cut tortillas into small circles (I used a lid for my circles and traced them with a knife) and fold them into a baking tin to form cups.
  • Heat skillet on medium and add oil. Once hot, add the soy curls, 1 tsp garlic powder, 1 tsp onion powder and salt and pepper. Fry until golden and remove from heat.
  • In a large bowl, add cream cheese, buffalo sauce, onion powder, garlic powder, salt and sour cream. Mix until combined, removing clumps.
  • Next stir in soy curls, ranch dressing, and cheddar cheese shreds. Mix until combined.
  • Add mixture to the tortilla cups and bake for 25-35 minutes until golden brown.
  • Top with a dollop of sour cream, green onions and micro greens.
