Ingredients You’ll Need

For the Black Bean and TVP Taco filling

  • Textured vegetable protein (TVP): Dry TVP absorbs the taco seasoning and water, creating a savoury, ground-meat-style texture.
  • Black beans: Add black beans for heartiness, fibre, and extra plant-based protein.
  • Yellow onion: Builds flavour and adds a savoury base to the filling.
  • Taco seasoning: A convenient way to add plenty of smoky, savoury taco flavour. I used Siete Mild Taco Seasoning.
  • Water or Vegetable Broth: Hydrates the TVP while helping the seasoning coat the filling.
  • Oil: For sautéing and lightly crisping the tacos.
  • Optional salsa or tomato sauce: Adds extra moisture and flavour if you prefer a saucier filling.

For assembling the tacos

  • Small tortillas, corn or flour
  • Shredded vegan cheese
  • Diced tomatoes
  • Fresh cilantro
  • Lime wedges
  • Salsa, guacamole, or your favourite vegan taco toppings

How to Make Vegan Black Bean and TVP Tacos

1. Sauté the onion

Heat a little oil in a large skillet over medium heat. Add the diced onion and cook for 3–4 minutes, stirring occasionally, until softened and fragrant.

2. Add the TVP

Add the dry TVP to the skillet and stir for about 1 minute, allowing it to mix with the onion.

3. Season and hydrate

Add the taco seasoning and water. Stir well to combine, then let the mixture simmer for 3–5 minutes, until the TVP has absorbed the liquid and softened.

If the filling looks dry before the TVP is fully hydrated, add a splash of water as needed.

4. Stir in the black beans

Add the drained and rinsed black beans to the skillet. Stir to combine and cook for another 2–3 minutes, allowing the flavours to come together.

For a little extra moisture, stir in a few tablespoons of salsa or tomato sauce. Taste and adjust the seasoning as needed.

Slightly mash the mixture until it begins to stick together.

5. Assemble the tacos

Preheat your oven to 425°F (220°C).

Lightly warm the tortillas to make them easier to fold. Fill each tortilla with the TVP and black bean mixture, then add a sprinkle of vegan cheese.

Fold the tortillas over the filling and arrange them on a lightly oiled/ or silicone baking sheet. Lightly brush or spray the tops with oil to help them crisp up.

6. Bake until crispy

Bake for approximately 10–14 minutes, checking early and adjusting as needed depending on the tortilla type and thickness. Flip halfway through if you’d like both sides evenly crisp.

The tacos are ready when the tortillas are golden and crispy and the cheese has melted.

7. Add your toppings and serve

Finish with diced tomatoes, fresh cilantro, a squeeze of lime, and your favourite salsa or vegan crema.

Serve immediately while the tortillas are at their crispiest! Or store away and reheat for an easy meal.

Meal Prep Friendly

These black bean and TVP tacos are such a great meal prep option. They are easy to put together, which is a major pro when meal prepping breakfast, lunch, and dinner for the week.

Just store your fresh toppings separately and add them once heated. Another plus, these tacos are very compact, taking up minimal space in the fridge. No tricky games of refrigerator Tetris.

Tips for the Best TVP Tacos

Don’t skip hydrating the TVP. Give it a few minutes to absorb the seasoned liquid so the filling has a tender, satisfying texture.

Keep an eye on the moisture. TVP absorbs liquid quickly. If the mixture seems dry or crumbly, add water a tablespoon at a time until it reaches your preferred consistency.

Warm your tortillas before folding. A quick warm-up makes them more pliable and helps prevent cracking, especially with corn tortillas.

Don’t overfill the tacos. A moderate amount of filling makes the tacos easier to fold and helps them crisp up evenly.

Use a little oil for extra crunch. Lightly brushing or spraying the tortillas before baking helps them turn golden and crispy.

Easy Variations

  • Make them spicier: Add chipotle powder, cayenne, or your favourite hot sauce to the filling.
  • Add more vegetables: Stir in finely diced bell pepper or mushrooms with the onion.
  • Switch the beans: Pinto beans or kidney beans can work in place of black beans.
  • Add extra toppings: Try shredded lettuce, pickled red onions, avocado, jalapeños, or vegan sour cream.
  • Make them gluten-free: Choose certified gluten-free corn tortillas and check the labels on your TVP and taco seasoning.

How to Store and Reheat

Store the filling: Let it cool completely, then refrigerate in an airtight container for up to 4 days.

Store leftover assembled tacos: Refrigerate in an airtight container and enjoy within 3 days for best quality. The tortillas will soften during storage.

Reheat: For the crispiest results, reheat assembled tacos in an air fryer or oven at 375°F (190°C) until warmed through and crisp again. You can also reheat the filling in a skillet and assemble fresh tacos.

Freeze the filling: The cooked TVP and black bean filling can be frozen in a freezer-safe container for up to 3 months. Thaw in the refrigerator before reheating.

Frequently Asked Questions

What is TVP?

TVP stands for textured vegetable protein. It’s used as a plant-based meat alternative. When hydrated and seasoned, it takes on a savoury, ground-meat-like texture, making it great for tacos, chili, pasta sauces, and more.

Do I need to cook TVP before adding it to the skillet?

No. For this recipe, you can add the dry TVP directly to the skillet with the taco seasoning and water. Let it simmer for a few minutes so it can absorb the liquid and soften.

Are these vegan tacos high in protein?

TVP and black beans are both sources of plant-based protein, making this a protein-rich filling compared with one made from vegetables alone. The exact protein per taco depends on the amount of filling, tortilla size, and vegan cheese used.

Can I make the filling ahead of time?

Yes! Prepare the filling in advance and refrigerate it until you’re ready to eat. When it’s time for dinner, fill your tortillas, add vegan cheese, and bake until crispy.

Can I use corn tortillas?

Absolutely. Corn tortillas work well, especially if you want a gluten-free option. Warm them before filling to make them easier to fold, and check them early while baking because thinner tortillas can crisp more quickly.

Final Thoughts

These crispy vegan black bean and TVP tacos are proof that plant-based dinners can be simple, satisfying, and full of flavour. With a savoury taco filling, melted vegan cheese, and golden, crunchy tortillas, they’re a delicious addition to your weekly dinner rotation or meal prep menu.

Make the tacos ahead for an even easier meal, reheat, load up your favourite toppings, and enjoy a new take on taco night!
