This Strawberry Poppyseed Dressing is my new favourite to dress all your salads this summer. I’ve had salads with poppyseed dressings before and always found them to be so delicious! This recipe is quick, easy, and will add a nice vibrant pop to your crisp summer salads.

Salads are a great way to load up veggies but always a delightful way to combine greens, fruits, nuts and proteins for the perfect balanced meal. When I decided to make my latest salad jar meal prep, I knew I wanted to include some fresh summer strawberries as one of the vibrant layers. And what would go great with a strawberry salad? A strawberry poppyseed dressing!

The Dressing

You might know that I’m a sauce person. And I think that the salad dressings can change the whole vibe of your meal, so you want to make sure it’s a good one. This Strawberry Poppyseed Dressing will elevate any salad with a nice subtle, but summery flavour while adding a beautiful burst of colour to the plate.

While it may look like a creamy dressing, the texture is quite light. The Strawberry Poppyseed Dressing combines the sweetness of the ripe strawberries with the nutty crunch of poppy seeds.

Strawberries are a summery and classic fruit cherished for their vibrant red colour, juicy texture, and sweet-tart flavour. They are packed with vitamins, particularly vitamin C, antioxidants, and dietary fibre. Poppy seeds, on the other hand, bring a subtle nutty flavour and a satisfying crunch to the dressing. Ingredients You’ll Need:

To make this delicious strawberry poppyseed dressing, you’ll need the following ingredients:

Fresh Strawberries

Using fresh strawberries adds a nice crisp element and a sweet burst of flavour while making your dressing the perfect consistency.

Spices

Adding a blend of more savoury seasonings is the perfect complement to balance out the sweetness of the strawberries.

Poppyseeds

The poppy seeds give this dressing a little crunch while also giving your salad an extra dash of nutrients and antioxidants.

Steps

Blend the Strawberries: In a blender or food processor, add the sliced strawberries and blend until smooth. You can strain the puree through a fine mesh sieve if you prefer a smoother consistency, but this step is optional. I just blended mine and the consistency was pretty smooth.

Mix the Ingredients: In a bowl, combine the strawberry puree, maple syrup, red wine vinegar and spices. Whisk until maple syrup is fully dissolved.

Add the Olive Oil: Slowly drizzle in the olive oil while whisking continuously to emulsify the dressing. This will give the dressing a creamy consistency.

Incorporate the Poppy Seeds: Stir in the poppy seeds until they are evenly distributed throughout the dressing.

Season to Taste: Add a pinch of salt and freshly ground black pepper. Taste the dressing and adjust the sweetness or acidity as needed by adding more maple syrup or vinegar.

As I mentioned, I made this dressing specifically to go with my Strawberry Poppyseed Salad Jar Meal Prep but you can use it for any salad you desire. It compliments all the delicious salad ingredients making for a super tasty lunch! My salad jar recipe with this dressing includes red bell pepper, cucumbers, quinoa, strawberries, pickled red onions, toasted almonds and arugula. It is loaded with protein making this salad a filling and fueling meal.

Storing your Strawberry Poppyseed Dressing

Ingredients
  

  • 1 cup strawberries chopped
  • 2 tbsp maple syrup
  • 2 tbsp red wine vinegar
  • ¼ cup oil
  • ½ tsp salt
  • 1 tsp ground mustard
  • ¼ tsp black pepper
  • 2 tsp poppy seed

Instructions
 

  • Blend strawberries in a blender until combined.
  • Add maple syrup, red wine vinegar, oil, salt, ground mustard and black pepper and whisk. Then add in your poppy seeds.
