This breakfast or brunch option combines three things I love: matcha, pancakes and tacos. Matcha Pancake Tacos combine the earthy, umami-rich taste of matcha with the comforting fluffiness of pancakes, all wrapped up in a fun, taco-inspired presentation. The Inspiration Behind Matcha Pancake Tacos

Pancakes are always a delightful breakfast option and there are a bunch of ways to play around with the flavour. One might add chocolate chips, berries, cinnamon, etc to switch things up. All of these are fun but I wanted to play with the flavour AND the presentation. Rather than serving pancakes in a glorious stack as one usually would, I was inspired by my love for tacos. The matcha pancakes would act as the tortilla and would include toppings such as a yogurt sauce, berry toppings, and granola crumbled on top. And there you have it, a breakfast taco of sorts.

Crafting the Perfect Matcha Pancake

The foundation of this dish is, of course, the matcha pancake. The key to a perfect matcha pancake is achieving a balance between the bitterness of the matcha and the sweetness of the pancake. Using a quality matcha powder is important for achieving the gorgeous colour and delicious umami flavour for this recipe. Look for a ceremonial grade matcha powder.

What you’ll need: Matcha Pancakes

Here’s how you can make them:

Matcha Pancake Ingredients:

  • Flour (I used gluten-free flour)
  • Baking Powder
  • Salt
  • Non-dairy milk
  • Non-dairy butter
  • Vanilla extract
  • Ceremonial grade matcha powder
  • Maple syrup

A Pancake Taco Filling

Sauce: I used a non-dairy vanilla yogurt as my base. This provides a delicious creamy texture, and sweetness but also keeps your other toppings from sliding off.

Berries: Adding a little bit of freshness on top of your taco! Strawberries and blueberries complement the matcha flavour perfectly.

Granola: A little chocolate granola is the perfect garnish for your breakfast tacos. Think cilantro sprinkle vibes except the granola provides a delicious crunch.

Matcha Pancake Tacos

Just when you thought tacos couldn't get any better. Matcha Pancake Tacos are a delicious way to elevate a classic pancake breakfast with a new taste and presentation. Everything tastes better in taco form right?
Cook Time 20 minutes
Course Breakfast

Ingredients
  

  • 1 cup gluten-free flour
  • 1 tbsp baking powder
  • ¼ tsp salt
  • cup non-dairy milk
  • 2 tbsp dairy-free butter melted
  • 2 tsp vanilla extract
  • 1 tbsp matcha ceremonial grade

Toppings:

  • non-dairy vanilla yogurt
  • granola
  • fresh berries
  • maple syrup

Instructions
 

  • In a medium bowl, add dry ingredients (flour, baking powder, salt & matcha) to a bowl and mix.
  • In a separate bowl, add wet ingredients (non-dairy milk, dairy-free butter, vanilla extract, & maple syrup) and mix.
  • Pour the wet ingredients into the bowl of dry ingredients whisking to combine. Be careful not to over-mix. The batter should be somewhat clumpy.
  • Heat a non-stick pan on low-medium heat and add approx 1/8 of the pancake mix.
  • Wait until bubbles form and flip.
  • Construct pancake tacos by adding your desired toppings.
