Matcha Pancake Tacos
Just when you thought tacos couldn't get any better. Matcha Pancake Tacos are a delicious way to elevate a classic pancake breakfast with a new taste and presentation. Everything tastes better in taco form right?

- 1 cup gluten-free flour
- 1 tbsp baking powder
- ¼ tsp salt
- 1¼ cup non-dairy milk
- 2 tbsp dairy-free butter melted
- 2 tsp vanilla extract
- 1 tbsp matcha ceremonial grade
Toppings:
- non-dairy vanilla yogurt
- granola
- fresh berries
- maple syrup
In a medium bowl, add dry ingredients (flour, baking powder, salt & matcha) to a bowl and mix.
In a separate bowl, add wet ingredients (non-dairy milk, dairy-free butter, vanilla extract, & maple syrup) and mix. Pour the wet ingredients into the bowl of dry ingredients whisking to combine. Be careful not to over-mix. The batter should be somewhat clumpy.
Heat a non-stick pan on low-medium heat and add approx 1/8 of the pancake mix.
Wait until bubbles form and flip.
Construct pancake tacos by adding your desired toppings.
