Crowd-pleasing: Ideal for sharing at holiday parties or gifting.

What is a Blondie?

A blondie is a dessert bar similar to a brownie, but instead of a chocolate base, it has a rich, buttery, caramel-like flavour thanks to ingredients like brown sugar and vanilla. Blondies are often made with flour, butter and sugar and can include add-ins like chocolate chips, nuts, or dried fruit.

Where brownies rely on cocoa or chocolate for their signature flavour, blondies get their unique taste from the warm sweetness of brown sugar and vanilla, making them lighter in colour—hence the name “blondie.” They have a soft, chewy texture, similar to brownies, and are equally versatile and satisfying.

By adding a few special and festive spices, you can turn a traditional blondie into a festive treat.

What You’ll Need for These Tasty Gingerbread Blondies

Let’s take a closer look at the key ingredients that make these vegan gingerbread blondies both flavorful and irresistibly gooey:

Flour: All-purpose flour serves as the base for structure, creating the perfect balance between a tender and chewy texture. You can also substitute with a 1:1 gluten-free flour blend if needed.

Molasses: This is the star of the show for that enhances that classic gingerbread flavour—deep, rich, and slightly smoky. It also adds moisture to the blondies, keeping them soft and fudgy.

Brown sugar: Light brown sugar provides a caramel-like flavour and pairs perfectly with the traditional gingerbread spices.

Vegan butter: Essential for adding richness and ensuring a soft, chewy texture. This recipe calls for a melted consistency.

Aquafaba (or flaxseed/chia egg): Aquafaba, the liquid from canned chickpeas, is a fantastic egg replacer in baking. It mimics the binding and leavening properties of eggs, helping these blondies hold together while keeping them fluffy.

Ground spices (ginger, cinnamon & allspice: These warm spices bring the iconic gingerbread flavour. Feel free to adjust the quantities to suit your personal preference.

Vanilla extract: Adds depth and complements the spices and molasses with its sweet, aromatic flavour.

Baking powder and baking soda: These leavening agents provide a slight lift, helping the blondies stay soft and light rather than dense.

Salt: A pinch of salt balances the sweetness and enhances the flavours.

Optional add-ins: For extra texture and variety, stir in vegan white chocolate chips, dark chocolate chunks, and chopped nuts (like pecans or walnuts). These add-ins elevate the blondies and make them even more festive.
