Blueberry and lemon are such a tasty combination and this recipe is not shy on either flavours. With sweet fresh blueberries mixed into the rolled oats base and the sweet tangy lemon curd layered on top, this breakfast prep will certainly kick off your day on a high note.

TIPS FOR PERFECT OVERNIGHT OAT
- Choose the Right Oats: Old-fashioned rolled oats work best for overnight oats. Avoid using quick oats or steel-cut oats, as they won’t give you the same creamy texture.
- Add extras: Whether it’s chia seeds, or flax meal, adding superfoods like these will boost the nutritional value of your breakfast prep.
- Mix Well: Ensure all the ingredients are well mixed to prevent clumping.
- Adjust Consistency: If your oats are too thick in the morning, add a bit more liquid until you reach the desired consistency.
- Experiment with Liquids: I use oat milk but feel free to experiment with almond, soy, or coconut or other non-dairy milk to play with texture and taste.

Blueberry and lemon are two flavours that so harmonious and a popular summer-time flavour. The blueberries add a natural sweetness to the base of this oats recipe. They add a stunning pop of colour and a dose of antioxidants to this prep! The lemon flavour, coming from the lemon curd layer, uses its zesty and tangy acidity to enhance the sweetness of the blueberries. This easy, make-ahead breakfast is a perfect blend of sweet and tangy flavours, with a delightfully creamy texture that will make your mornings a little better.
Ingredients for the Blueberry Lemon Overnight Oats
This overnight oats recipe has 3 major components: blueberry oats, lemon curd, and coconut vanilla yogurt. All of these flavours work together to make the most delicious layered breakfast prep that will have your eyes rolling with every bite.
Blueberry Overnight Oats
Puree some blueberries and add them to each of your meal prep jars with your rolled oats, chia seeds, non-dairy milk, maple syrup and stir.
Lemon Curd
The vibrant, zesty tang of the lemon curd is the perfect match to balance out the blueberry oats layer. By combining the juice of a lemon, starch, coconut cream, sugar, and turmeric, you will have a delicious, pudding-like, lemon layer.
Coconut Vanilla Yogurt
This subtle addition of yogurt adds a nice subtle yet creamy layer to these breakfast jars. I find the coconut vanilla flavour of the non-dairy yogurt works to not overpower the blueberry and lemon flavours but rather perfectly complement them.
Toppings (Optional)
I use a coconut cashew granola on top of these Blueberry Lemon Overnight Oats breakfast jars for an extra sprinkle of fibre, protein, and nourishing fats. I also like to add a few fresh blueberries for an extra fresh and delicious bite.
Steps: Making Blueberry Lemon Overnight Oats
This recipe makes four jars. When reading the ingredients, simply divide the measurements by 4 for each jar.
Step 1: Make lemon curd. In a small sauce pan, add lemon juice and arrowroot starch. Stir until combined and begin to heat on medium. Once heated, add coconut cream, cane sugar, lemon zest and turmeric. Reduce heat and let simmer for 4-5 minutes. Place in fridge to cool for 2 hours to get a thick consistency.
Step 2: Make your overnight oats. Puree blueberries in a blender. In 4 separate jars, combine your pureed blueberries, rolled oats, chia seeds, non-dairy milk, and maple syrup. Stir it and refrigerate for at least 2 hours.
Step 3: Layer. Layer blueberry overnight oat jars with the lemon curd and non-dairy coconut vanilla yogurt.
Step 4: Add your toppings. Please note that if you add the granola at this point it may get a little soggy in the jar. You could always put it in a separate container with your blueberries for the day of when you go to enjoy.

- 1 cup blueberries fresh
- 2 cups rolled oats
- 2 tbsp chia seeds
- 2 cups non-dairy milk
- 2 tbsp maple syrup
- 2 cups non-dairy yogurt
Lemond Curd
- ½ cup lemon juice
- 1 tbsp arrowroot starch
- ⅓ cup coconut cream
- ¼ cup cane sugar
- 1-2 tsp lemon zest
- ⅛ tsp turmeric
