This Almond Croissant Baked Oatmeal is layered with warm vanilla-soaked oats, a whipped almond tofu spread that tastes like almond pastry cream, and it’s crowned with a toasted croissant piece that gets all golden and caramelized thanks to a little maple syrup magic. Almond Croissant Baked Oatmeal Highlights

Rolled oats – our hearty, cozy and nourishing base.

Soy milk + vanilla extract – for a creamy, sweet texture.

Almond butter tofu whip – made from silken tofu, almond butter, maple syrup, and almond extract for a creamy, protein-rich layer that tastes like a bakery filling.

Vegan almond croissant – torn and nestled right on top (you can find these at select bakeries or make your own if you’re feeling ambitious. I bought plain plant-based croissants from Farm Boy and then brushed maple syrup and sprinkled almonds on top.

Maple syrup + slivered almonds – brushed and sprinkled over the top for that classic toasted almond finish.

Ingredients:

Baked Oats

  • 1 cup oats
  • 1 tbsp chia seeds
  • 1 cup almond milk
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 2 tbsp almond butter

Almond Butter Tofu Whip

  • 1 pkg silken almond tofu (or plain silken tofu with 1-2 tsp of almond extract)
  • 1/2 almond butter
  • 2 tsp vanilla extract
  • 2 tsp maple syrup

Toasted Almond Croissant

  • 1/2 plain croissant
  • 1/4 tsp maple syrup
  • 1 tbsp almond slices

Almond Croissant Oatmeal: How to Make It

A Step-By-Step Guide

  1. Combine Ingredients – Add rolled oats, soy milk, vanilla, and maple syrup to a sauce pan and cook on medium heat. Bring to simmer for 10-15 minutes. Remove from heat and add to ramekins.
  2. Whip the almond layer – Blend silken tofu, almond butter, maple syrup, and almond extract until smooth and dreamy.
  3. Layer it on – Spread that whipped almond goodness right over the oats and on the croissant.
  4. Top with croissant – But half a croissant on each ramekin.
  5. Brush + sprinkle – Lightly brush the croissant pieces with maple syrup and sprinkle on slivered almonds.
  6. Toast it – Pop in the oven or under the broiler until everything is golden and slightly crisp on top.

Baked Oats

  • 1 cup oats
  • 1 tbsp chia seeds
  • 1 cup almond milk
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 2 tbsp almond butter

Almond Butter Tofu Spread

  • 1 pkg silken almond tofu, or plain silken tofu with 1-2 tsp of almond extract
  • 1/2 cup almond butter
  • 2 tsp vanilla extract
  • 2 tsp maple syrup

Toasted Almond Croissant

  • 1 plain croissant
  • 1/2 tsp maple syrup
  • 2 tbsp almond slices

Instructions
 

  • Combine Ingredients: Mix rolled oats, chia seeds, soy milk, vanilla, and a touch of maple syrup in a sauce pan and cook on medium heat, bringing to a gentle boil, stirring occasionally. Reduce heat and bring to a simmer for 10-15 minutes until you have a pudding-like consistency.
  • Whip the almond spread: Using an immersion blender, blend silken tofu, almond butter, maple syrup, and almond extract until smooth and creamy.
  • Layer it on: Spread the whipped almond spread over the baked oats. Cut a croissant in half and add the remaining almond spread.
  • Brush + sprinkle: Lightly brush the croissant pieces with maple syrup and sprinkle on slivered almonds.
  • Top with croissant: Cut the croissant into two halves, adding one half to each ramekin.
  • Toast it: Pop in the oven or under the broiler until everything is golden and slightly crisp on top.
