I am so proud of this meal prep because it came from a vision, or a craving rather. I love the refreshing taste of lime and the creaminess of coconut. The result was even better than I imagined. This coconut lime soy curl meal prep has everything your tastebuds would want. Don’t just take my word for it. I made this meal prep for my friend and she gave it a raving review. Do you ever get a craving that you can’t seem to shake? I came across a coconut lime chicken recipe and couldn’t get that flavour combination out of my head. I scoured the internet and was surprised that I didn’t see any vegan options out there. So, I decided to set out on my own mission to create my own veganized version. And was pretty dang successful if I do say so myself. The tender soy curls, infused with the tropical duo of coconut and lime, offer a mouthwatering complexity of tastes and textures. You will be dreaming about this dish.
Coconut Lime is one of those combinations that is a flavour explosion. The tropical allure of the creamy coconut balanced by the zesty kick of the lime sends your taste buds on a delicious journey. Whether you’re a vegan, or just looking to add more plant-based options to your meal rotation, this meal prep will likely be made again and again. And I wouldn’t blame you. I usually am bored of my meal preps after 4 days. But I could have eaten this one for a whole other week.
Getting to the “Meat” of it: The Soy Curls
When I originally got the idea for this dish, I saw something similar made with chicken. And one of my favourite chicken replacements is soy curls. I use Butler Soy Curls, which are whole soybeans that come dried in a bag. They are quite easy to work with as you only need to soak to rehydrate them.

Marinade: the soy curl bath
The marinade for the soy curls is easy peasy! You just need some vegetable broth, lime juice, garlic, coconut sugar, salt and pepper. Combine these ingredients and let those soy curls soak in the mixture for about 15 minutes. It’s the perfect amount of time to let these curls come back to life while absorbing all the different flavours from the marinade. Just be sure to give a mix halfway through to ensure all the pieces are evenly moist.

Better in Batter: coating the soy curls
Once the soy curls are hydrated, you can grab the soy curls, squeeze out the excess broth, and toss them in the flour to coat. But don’t throw the broth away! You’ll use the remaining broth later so keep it close by.
Coating the soy curls in flour helps give the soy curls a little extra crispiness while frying and in addition to a nice little charring which really enhances the meat-like characteristic.
Now, if you’re a cilantro fan, I highly recommend adding some chopped cilantro into the flour batter. It really helps to balance out the sweetness from the coconut and the tanginess from the lime in the final product. But, if you’re of the lot that thinks cilantro resembles soap, you can skip it and this dish would still be incredible.
Simmer Simmer Simmer – with the Lime and the Coconut
Once those soy curls look like some gorgeous slightly charred/browned chick-un, you’ll want to simmer them in a delicious coconut lime bath to solidify those flavours. This is where you’ll add the coconut milk and the excess marinade until the sauce gets nice and thick. You’ll notice how much these little soy curls soak up. Now, before you add these to your meal prep containers, top off the soy curls with the juice of one lime.
Ready, Set, Prep!
This vegan coconut lime soy curl dish is best served with some rice, steamed broccoli, and pickled red onions. This combination is an absolute knockout.
Layer the meal prep containers with rice, the broccoli and top with your amazingly delicious vegan coconut lime soy curls. Top the preps with those pickled red onions and store for 4-5 days. The hard part is waiting patiently for lunchtime the next day.

Vegan Coconut Lime Soy Curl Meal Preps
Ingredients
- 1 cup rice, rinsed
- 2 broccoli crowns chopped florets
Marinade
- 2.5 cups vegetable broth warmed
- 2 limes juiced
- 6 cloves of garlic minced
- 2 tsp coconut sugar
- 1 tsp salt
- 1 tsp pepper
Fried Soy Curls
- 8 oz Butler soy curls
- ½ cup all-purpose flour
- 2 tbsp coconut oil
- 1 can coconut milk 400ml
- ½ cup cilantro chopped (extra for topping)
- 1 lime juiced
- pickled red onions topping
Instructions
- Cook 1 cup of dried rice according to instructions.
- Fill the bottom of a pot with water and bring to a boil. Add steamer basket and steam until tender.
- Combine marinade ingredients in a medium bow, or shallow 8×8 dish. Add the bag of soy curls and let them soak for 15 minutes, stirring them at the halfway point.
- In a medium mixing bowl, add flour and chopped cilantro pieces.
- Take the bowl of marinated soy curls and begin removing the soy curls, a handful at a time, squeezing out the excess liquid and tossing them in the flour mixture. Do not discard marinade.
- In a large skillet, heat oil on medium-high heat. Grab the soy curls, shake off the excess flour, and add them to the skillet until they become browned (approximately 5-10 minutes)
- Into the skillet, add the remaining marinade and coconut milk and bring to a simmer until the sauce thickens. On thickened, add the juice of one lime.
- Add rice and soy curls to meal prep containers and top with chopped cilantro and pickled red onion.
