As the leaves start to turn vibrant shades of red, oranges and yellows, and the air becomes crisp, it’s time to indulge in the flavours of the season. Among the many delights that fall brings, baking is the perfect way to usher in those cozy vibes. These delightful Mini Maple Pumpkin Cakes encapsulate everything we love about autumn – warmth, comfort, and the rich, earthy flavours of pumpkin and maple.

Fall Flavours of Mini Maple Pumpkin Cakes

Two irresistible flavours of fall are maple and pumpkin and these mini cakes have both. These sweet treats are deliciously aromatic and make the whole house smell like a fall-scented candle. Not only that, these mini cakes are perfectly moist and tender! Who doesn’t want a warm baked good infused with the essence of autumn, thanks to the perfect blend of pumpkin puree, aromatic spices like cinnamon, allspice, vanilla, and of course, the unmistakable sweetness of pure maple syrup?

Maple

Maple syrup, aside from being deliciously sweet, adds a depth of flavour that perfectly complements the earthy notes of the pumpkin. It also contributes to the overall texture of these little pumpkin cakes, adding to the other wet ingredients to make them a perfectly moist consistency. But the deliciousness doesn’t stop there. The maple flavour is also incorporated into the glaze that is poured over these pumpkin cakes. The perfect amount of maple if you ask me.

Pumpkin

I mean, pumpkin is famously used in all sorts of delicious fall treats. It seems that pumpkin-flavoured treats are synonymous with fall weather. You can have pumpkin-flavoured coffee, overnight oats, or in sweet treats like pies and cakes. All you need is a little pumpkin puree and you’ll automatically capture the essence of autumn. Similarly to the maple, you can find the pumpkin flavour in both the cake and the glaze in this recipe.

I do have a confession. I’m not the biggest fan of pumpkin lattes. But before you write me off, I still appreciate other pumpkin-flavoured treats. It may not be a latte, but this cake brings the same delicious autumn vibes. I urge you to give it a try. I think it will win me some points.

It’s the Little Things: The Making of Mini Maple Pumpkin Cakes

While you could just make these as little muffins or tiny loaves, I went full tilt and embraced the fall vibes. I wanted my little pumpkin-flavoured cakes to, physically, resemble a cute pumpkin! I just used two silicone mini bunt cake moulds (each mould had 6 half bunts on them). You can find them here!

Once you take the moulds out of the oven, allow them to fully cool before you pop the little cakes out. Once cooled, drizzle a ring of the glaze around the inside of the mould so it has something to adhere to the other half.

Tip: you may want to shave a thin layer off the bottom of your pumpkin cake so it stands upright.

The Finishing Touch

What takes these mini maple pumpkin cakes to the next level is the decadent maple pumpkin glaze that glides down the sides of each one. Made with a generous drizzle of maple syrup, a touch of pumpkin, and a hint of warming spices, this glaze is what elevates these mini cakes to the next level.

Extra Toppings for Your Mini Maple Pumpkin Cakes:

Now there are two things I’ve added to bring the whole imagery of the pumpkin together – sage leaves and cinnamon sticks. Together these items highlight how cute these mini pumpkins are. Cinnamon sticks are the perfect little stems for these pumpkins. Remember that these are just for show, you definitely won’t want to chomp on one of those.

Also, I added a little sage leaf in the center along with the cinnamon stick to complete the picture by making the cake look more like a realistic pumpkin. Again, not something that you would eat on its own, but just a little design element that facilitates the whole vibe.

Mini Maple Pumpkin Cakes

A fall treat that embraces favourite festive flavours of maple, pumpkin, cinnamon and vanilla. These little cakes are so delicious and perfect to welcome in the autumn season.

Ingredients
  

Maple Pumpkin Cake

  • 1 ¼ cup flour gluten free
  • 1 cup non-dairy milk oat milk
  • 1 tbsp cornstarch
  • ½ tsp baking soda
  • 1 tsp salt
  • 1 ½ tsp vanilla extract
  • 2 tsp cinnamon
  • ½ tsp all spice
  • cup coconut sugar
  • ½ cup pumpkin puree
  • ¼ cup sunflower oil
  • ¼ cup maple syrup

Maple Pumpkin Glaze

  • ½ cup powdered sugar
  • 2 tbsp maple syrup
  • 2 tsp vegan margarine
  • 1 tbsp pumpkin puree
  • ½ tsp vanilla extract
  • cinnamon to taste
  • salt to taste

Instructions
 

  • Preheat over to 350℉. Grease muffin tin, or mini silicone bunt cake molds. 
  • Add all the dry ingredients to a bowl and mix [1 ¼ c flour, 1 tbsp cornstarch, ½ tsp baking soda, 1 tsp baking powder, ½ tsp sea salt, 2 tsp cinnamon, ½ tsp allspice, ⅔ c coconut sugar].
  • Add all the wet ingredients to a different bowl and mix [1 c oat milk, 1 ½ tsp vanilla extract, ½ c pumpkin puree, ¼ c sunflower oil, ¼ c maple syrup].
  • Slowly add the wet ingredients to the bowl of dry ingredients, mixing thoroughly throughout.
  • Pour cake batter into the muffin tin or moulds and place in the oven for about 20-30 mins. 
  • To make the icing combine all of the ingredients in bowl and mix [½ c powdered sugar, 2 tbsp maple syrup, 2 tsp vegan margarine, 1 tbsp pumpkin puree, ½ tsp vanilla, pinch of cinnamon and salt].
