This Toasted Marshmallow Latte with Pumpkin Cold Foam is the perfect drink to welcome fall and get a little festive for spooky season. I am one of those people who loves fall so as soon as the weather turns a little more crispy, I start diving into more cozy and festive recipes. And while the transition from summer to fall is a wild ride here in Ontario, Canada (a weird rollercoaster of hot and cold days), I try to indulge in iced beverages as long as I can. An iced coffee is always a good idea, in my opinion, and this one pairs the festive flavours of toasted marshmallow and a classic hint of pumpkin for the ultimate fall drink.

Marshmallow Ghosts

While the drink itself is absolutely delicious, the cute addition of marshmallow ghosts really takes this drink to the next level with its festive flair. And guess what? It’s super easy to make. Obviously if you have premade marshmallow cream it’s that much easier. I first came across My Dandies Vegan Marshmallow Cream during my visit to Pittsburgh in 2024 (p.s. if you haven’t checked out my vegan guide to Pitttsburgh click here). It’s not something that is easy to find in Canada, but I have been able to order it online. If your can’t find some and you’re willing to put in a little more effort, I highly recommend checking out this recipe from It Doesn’t Taste Like Chicken. I’ve made it before and it tasted amazing!

The perfect fall drink featuring a toasted marshmallow syrup, coffee, creamy oat milk, and a layer of velvety pumpkin cold foam made with real pumpkin purée. I highly recommend adding marshmallow fluff ghosts to your cup for a fun, festive touch to kick off spooky season.

Equipment

  • 1 glass or plastic cup
  • 1 1 dry-erase marker to dry on eyes and mouth

Ingredients
  

Marshmallow Cream Ghost

  • 4 tbsp Marshmallow Cream

Toasted Marshmallow Latte

  • 2 tsp toasted marshmallow syrup
  • 1.5 cups coffee
  • 1/8 cup @earthsown oat barista

Pumpkin Cold Foam:

  • 2 tbsp pumpkin puree
  • 1/8 cup vanilla soy milk, coffee creamer optional

Instructions
 

  • Use 1 tbsp of marshmallow cream to make each ghost shape on the inside of your cup. Using a dry-erase marker, add eyes and a mouth on the outside of the cup.
  • Add syrup, ice, coffee and non-dairy milk to the cup.
  • In a frothing machine or with a handheld frother, add pumpkin puree with your favourite coffee creamer and whip until a cold foam forms. Add to the drink and enjoy.
