Spooky Graveyard Cinnamon Coffee Cake: The Ultimate Halloween Treat

Halloween season is upon us, and what better way to celebrate than with a cozy, spooky twist on a classic? This Cinnamon Coffee Cake with a Graveyard Streusel will be the star of your dessert table at any Halloween gathering. The graveyard scene on top of the coffee cake is so fun and festive. I was browsing Pinterest one day and saw a gorgeous cake made by Jessie Day with cute little skulls on top. I thought it would be fun to make a veganized version and ended up adding to the spooky scene by adding other graveyard elements.

At its heart, this cinnamon coffee cake is a timeless classic. I have fond memories of eating coffee cake while growing up and so it’s always nostalgic when I make one. This light, fluffy cake base is infused with a perfect balance of cinnamon and vanilla, making it a deliciously comforting fall treat. The batter comes together quickly, making it an ideal dessert for busy bodies still craving some homemade baking.

The Streusel: A Crumbly Graveyard Twist

The streusel topping is where the magic happens. To me, it’s always the best part of a cake or muffin. Made with butter, sugar, and cinnamon, this topping gets an extra dose of Halloween fun by transforming it into a graveyard scene. These little spooky decorations on top of your cake are such a fun and festive way to jazz up a coffee cake for the Halloween season.

To make these spooky graveyard decorations all you need is silicone molds. I used a mixture of molds, some just skulls and another set with skulls, pumpkins and tombstones. They should be about an inch to get a good hold, if you go too small, they won’t set well. My mold had little bats on it but sadly they were too small and crumbled as soon as I took them out. I filled out one brown skull mold and two mixed moulds, which was more than enough. It also helps to have extra in case some don’t make it. Here are the exact ones I used:

Once you make your streusel, spread the mixture over the mold and place the sheet in the freezer for about 10 minutes while you make the rest of the coffee cake.

Making Cinnamon Coffee Cake with Graveyard Strusel

Gather your Ingredients:

Let’s get started on this spooktacular recipe. Grab these ingredients, prep the counter and let’s get started. You’ll need:

  • Brown sugar
  • Cinnamon
  • Flour
  • White sugar
  • Salt
  • Butter (slightly melted)
  • Baking powder
  • Baking soda
  • Non-dairy milk
  • Apple sauce

The Process of Cinnamon Coffee Cake with Graveyard Streusel

Preheat oven to 350F. Grab a loaf pan and some parchment paper.

Step 1: Make the streusel. In a medium mixing bowl, add melted butter, brown and white sugar, salt, and flour. Mix until combined and a crumbly texture is formed. Spread the mixture over the silicone molds leaving about 1/2 cup for later. Freeze silicone molds for about 10 minutes.

Step 2: Make the cinnamon layer. In a small bowl, add brown sugar and cinnamon and stir to combine. Set aside.

Step 3: Make coffee cake. In a medium mixing bowl, add flour, baking soda, baking powder and salt and whisk together. In another bowl, add wet ingredients, apple sauce, vanilla, non-dairy milk and brown sugar and stir. Slowly mix the dry ingredients into the bowl of wet ingredients to combine. Careful not to over-mix.

Step 4: Pour 1/2 the cake mixture into the loaf pan lined with parchment paper. Then add the cinnamon layer, sprinkling it evenly over the cake. Next add your other 1/2 of the cake mixture.

Step 5: Add the streusel: Pour the extra streusel leftover from the molds onto the cake and add a touch of cinnamon sprinkled over top. Remove your silicone molds from the freezer and carefully pop out your graveyard decorations. Add them on top of the cake.

Step 6: Place the coffee cake in the oven and bake for 40-45 minutes. Remove from oven and let sit for 15 minutes.
