Herby Ranch & BBQ Chickpea Salad Jar Meal Prep
This delicious salad jar meal prep is packed full of veggies, a delicious creamy sauce and a smoky/savoury layer of BBQ chickpeas. It's the perfect lunch to beat the summer heat.

Herby Ranch Dressing
- 1 cup vegan mayo
- ¾ cup cilantro
- 5 basil leaves
- 4 garlic cloves
- ½ tbsp dill dried
- ½ tsp onion powder
- 2 tbsp lime juice
- 1 tsp apple cider vinegar
- ⅓ cup coconut milk
- 1 tsp pepper
- 1 tsp salt
Salad Jar
- 2 cups grape tomatoes quartered
- 1 large yellow bell pepper diced
- 1 red onion diced
- 1 cucumber diced
- 2 ears of corn roasted or fresh
- 540 ml (19 fl oz) chickpeas rinsed and drained
- ½ cup BBQ sauce
Chop all veggies and set aside.
Heat skillet, add drained chickpeas and cover with BBQ sauce. Let simmer until the sauce thickens. Remove from heat and allow to cool.
Make Herby Ranch dressing. Add all ingredients to a blender or food processor and blend until smooth.
Begin layering the contents in a mason jar in the following order: Begin layering the contents in a mason jar in the following order: dressing, grape tomatoes, yellow pepper, red onion, cucumber, corn, BBQ chickpeas, lettuce/micro-greens.
Add lid and store in the fridge for up to 5 days.
